Great taste starts with great cashews
The cashew nut us native from the North-East of Brazil and has been introduced to India and Africa by Portuguese in the 16th century. The tree grows under tropical climate. Cashew nuts have been used as snacks for centuries.
The world cashew crop amounts for around 830 000 MT (kernels, INC) and the most important producers are India, Ivory Coast, Vietnam and Tanzania.
Our cashews are from African origin, Ivory Coast.
How are cashews grown?
The flowering period of the cashew tree takes place from December to January. Insects are the major pollinators of cashew. The cashew tree produces a shiny and juicy fruit, known as cashew apple which bears a single seeded nut in its bottom covered with a hard grey shell. They both appear about a week after fertilization.
The upper part of the fruit is edible and has a nice fruity taste. It is vastly unknown in the Western world as it is impossible to transport due to the fragility of the skin of the fruit but locals enjoy it as a snack, juice or liquor. The most valued product is the nut. Cashews are still harvested manually, picked up from the ground. This has to be done regularly to ensure they don’t stay long on the ground after their fall as this would impact the quality.
