Pioneering Chocolatier wins gold at ISM with Cabosse Naturals Ingredient
Cabosse, the delicious cacaofruit praline
The ISM Cologne is the world’s leading trade fair for confectionery and snacks and is a source of innovation and inspiration for artisans all over the world. During the fair, hundreds of snacks and confectionery products have been evaluated by the jury, and the Cabosse praline from Chocolatier Vandenbulcke was awarded the Most Innovative Product Award thanks to its unique taste and upcycled nature.
The innovative praline called “Cabosse” has a unique filling of upcycled cacaofruit pulp, the delicious white flesh that surrounds the cacaofruit seeds. The praline is made from dark chocolate and has the shape of a cacaofruit. The cacaofruit filling developed together with Cabosse Naturals has a refreshing fruity zesty taste.
The highly sustainable "Cabosse" praline is now available for the general public in Belgian supermarkets Colruyt and Delhaize, after it won the Most Innovative Product Award and was nominated at SIAL in Paris.

We all know chocolate is made from the seeds of the cacaofruit (or better known as beans), but many aren’t aware that the cacaofruit is actually a fruit, just like an apple or an orange. Previously, 70% of the cacaofruit was thrown away because only the seeds were used to craft our beloved chocolate.
Now not only its seeds but also the peel and the fresh and juicy pulp are used to create delicious and upcycled ingredients.
