1. Cool the glass with ice. 2. Mix the vodka, tomato juice, lime juice, paprika powder, Bottarga and sour foamer. 3. Add the olive oil and mix with a mixer for a few seconds. 4. Add the ganache by using the throwing technique. 5. Change the ice in the glass, and dirty the inside of the glass with a brush of the tomato sauce. Sprinkle a pinch of paprika and celery salt over the strip of tomato sauce. Pour the cocktail into the glass. 6. Serve with some umami-tomato parts. |

Van Houten Ground Dark Chocolate ganache

1. Pour the hot water in a plastic bowl. 2. Add Van Houten Ground Dark Chocolate and stir gently. 3. Cover the bowl and store in fridge for 12 hours. 4. Take out of the fridge 30-60 minutes before use. 5. Blend with a spatula. 7. Pour into a squeeze bottle and use! |
